TABASCO® with the volume turned down on the vinegar and up on the smoke. Chipotle peppers give this a deeper, richer character than the Original, with a gentle sweetness underneath the smoky chilli. Garlic, onion and spices add a little extra savoury depth, while the familiar TABASCO® tang keeps everything from becoming too heavy. I particularly like this when there’s something grilled involved. Chicken, burgers, ribs and roasted vegetables are obvious candidates, but it’s equally at home in marinades, dips and sauces. A few dashes in a smoky cocktail wouldn’t go amiss either. It’s still recognisably TABASCO®. Just darker, warmer and considerably more interested in hanging around for dinner.

The legendary red tabasco pepper sauce. Tabasco, produced by McIlhenny, was invented as early as 1868 and the recipe has remained the same to this day. Suitable for use with a very wide range of different savoury foods. There are no preservatives or artificial colours in Tabasco. Tabasco was included in the Hot Ones series on the 3rd season.

TABASCO® has put its own stamp on Sriracha, and the result is rather different from the little red bottle you might already have in your cupboard. Red jalapeños bring a gentle chilli warmth, with sugar giving it a softer sweetness than the Original TABASCO®. Garlic adds a savoury finish, while a little of the classic pepper sauce keeps that familiar TABASCO® tang in the background. It’s an easy one to use generously. Drizzle it over eggs, noodles, rice, burgers or fried chicken, or mix it with melted butter and you’ve got a rather handy glaze for wings and grilled food. Not every bottle needs to make you sweat. Sometimes you just need one that makes you reach for it again.

This is where TABASCO® stops being quite so polite. Habanero brings a proper step up in heat, but there’s considerably more going on than chilli and vinegar. Mango, banana, papaya and tamarind give the sauce a fruity sweetness and a little tropical tang, while garlic, onion and spices add some savoury depth underneath. I like the way the fruit softens the initial blow, because it makes this surprisingly easy to keep eating. Then the habanero reminds you that you were warned. Excellent with chicken, prawns, tacos and Caribbean-inspired dishes. It’s also rather good stirred into ketchup or mustard when your usual condiments have started looking disappointingly harmless. Sweet, fruity and properly hot. A very different beast from the Original, and one I wouldn’t leave unattended around a plate of fried chicken.

The bottle that needs very little introduction. TABASCO® Original is about as straightforward as hot sauce gets: red peppers, salt and distilled vinegar. Yet somehow that simple combination has become one of the most recognisable chilli sauces in the world. The vinegar gives it that unmistakable sharpness, while the fermented pepper brings a clean chilli warmth underneath. It’s not trying to turn dinner into a competitive event. It’s there to make food taste better, one dash at a time. Eggs, pizza, burgers, chips, soup, Bloody Marys — I could keep going, but frankly, you’ve probably already got your own list. And after more than 150 years, it’s still doing exactly what a good table sauce should do.

TABASCO® has finally decided that ordinary levels of trouble aren’t enough. Scorpion chilli brings a serious jump in heat, but the sauce doesn’t simply rely on the pepper to do all the talking. Guava and pineapple bring a juicy tropical sweetness that sits surprisingly well against the sharpness of the vinegar. That fruit is useful, because the Scorpion doesn’t exactly hang around quietly. The heat builds into a proper burn, while the pineapple and guava keep the flavour bright rather than allowing it to become nothing but punishment. I’d reach for this with grilled chicken, seafood, tacos or anything with a tropical edge. It could also make a very lively addition to a marinade or fruit-based salsa. Hot enough to demand respect, fruity enough to make you forget that for a moment. Then the Scorpion reminds you.

This Tabasco Scorpion Pepper Sauce is by far the hottest sauce from the world famous hot sauce brand. The incredibly hot Trinidad Scorpion peppers form the base of this sauce, but by adding a mix of guave and pineapple it also has a very tasty fruity side. So it’s very hot, but the flavor is also very well balanced. It’s not without a reason that this sauce is so popular among real chili heads.
