This is where TABASCO® stops being quite so polite. Habanero brings a proper step up in heat, but there’s considerably more going on than chilli and vinegar. Mango, banana, papaya and tamarind give the sauce a fruity sweetness and a little tropical tang, while garlic, onion and spices add some savoury depth underneath. I like the way the fruit softens the initial blow, because it makes this surprisingly easy to keep eating. Then the habanero reminds you that you were warned. Excellent with chicken, prawns, tacos and Caribbean-inspired dishes. It’s also rather good stirred into ketchup or mustard when your usual condiments have started looking disappointingly harmless. Sweet, fruity and properly hot. A very different beast from the Original, and one I wouldn’t leave unattended around a plate of fried chicken.
