Not every meal needs to be punished. Sometimes a chap simply wants a bit of jalapeño character without having to sign a waiver. El Yucateco Jalapeño Salsa brings a fresher, greener style of heat to the table. It’s lively rather than brutal, making it an easy bottle to reach for when you want a little more pep without losing sight of what you’re actually eating. Excellent with tacos, fajitas and nachos, naturally. I’d also happily put it on burgers, sandwiches, eggs or grilled meats. Mix it through guacamole or a dip when you want the jalapeño to do the talking. A thoroughly useful bottle to have lurking in the fridge. Even I occasionally appreciate restraint.

El Yucateco Habanero Coffee hot sauce is probably the most complex sauce from this classic hot sauce brand. It’s made with a mix of Habanero & Chipotle, giving it a slightly fruity but especially smoky character. On top of that, the coffee adds a rich and savoury flavour that makes this sauce pretty complex. Still, it’s not too hard to figure out what to use it with: burgers, as a marinade for meat, with tacos & nachos, on cheese or for example a quick dip combined with mayo. Now we’re getting into more serious territory. Mayakut takes habanero in a darker direction, with charred chillies bringing a smoky edge alongside tomato and spices. The result has considerably more character than simply shouting HOT at your dinner. This is a sauce for tacos, burritos, grilled meats and anything hearty enough to stand up to a proper dose of chilli. Try it stirred through a stew or soup when the weather is miserable and your food needs rescuing from the depths of culinary despair. The heat has some weight behind it, so begin with a modest amount. You can always add more. You cannot un-eat it.
