Some sauces are built for showing off. Marisquera Red is rather more interested in getting on with the job. This Mexican hot sauce combines dried peppers with fresh habaneros for a bright chilli kick. It’s particularly well suited to seafood, where a little heat can lift the flavour without steamrolling the whole plate. Try it with prawns, fish, ceviche or other seafood dishes. It also has a surprisingly good second career as a snack companion. Popcorn, crisps and peanuts are all fair game. A versatile little bottle so keep it nearby.
