Tubby Tom’s Pablo Diablo – Jalapeno, Lime x Coriander Hot Sauce

There are days when you want hot sauce to shout. Pablo Diablo prefers to make a persuasive argument. Jalapeño gives it a gentle chilli warmth, while lime and coriander keep everything bright, fresh and decidedly moreish. It has the sort of character that encourages you to pour rather than dab. Tacos, burritos and fajitas are obvious territory. I’d also try it with grilled chicken, white fish or mixed into mayonnaise for a quick, zingy dip. And because the heat stays sensible, you can actually use enough of it to taste what you’re eating. A surprisingly civilised little bottle.
