Tubby Tom’s Original Buffalo Hot Sauce

A proper Buffalo sauce should make you immediately want another mouthful. This one has the sharpness to cut through rich food, with aged cayenne bringing a deeper chilli character and garlic providing plenty of savoury punch. Of course, wings are an obvious destination. Toss them through the sauce while they’re still hot and let it cling to every crispy little crevice. But don’t consign the bottle to the chicken department. Eggs, avocado, fried food and mayonnaise all make excellent accomplices. In fact, I’d keep this one on the table. A Buffalo sauce that only comes out on wing night is being rather badly underused.
