Mama Yu’s Sambal

Mama Yu’s Sambal is a super flavourful sambal made with shrimp paste and dried shrimp. Not exactly the sambal we’re used to here in Europe, but shrimp is actually a really classic ingredient in sambals made across Asia. Mama Yu is a brand with a Malaysian-Chinese background, and you can totally taste that in this sambal. The shrimp paste adds a funky but above all rich umami flavour, while the peppers bring the heat. Onion, shallot, garlic, lemongrass, ginger and galangal add even more depth to the flavour. Besides the addition of shrimp, the use of more oil is also a little different from the sambal we know in Europe, but after a good stir, it has a lovely smooth texture that blends beautifully through an entire dish.
