La Pimenterie x Dawson’s Funky Franc Hot Sauce is like a perfect match between natural wine and hot sauce. Cabernet Franc grapes form the base and that’s combined with no less than 3 different peppers: the Aji Sugar Rush, red Habanero and Trinidad Perfume peppers. The latter isn’t spicy, but does have the aroma of a Habanero, with a slightly smoky flavour to it. On top of that, the sauce is packed with fruit, like raspberry, blackberries, dates and apple. Hibiscus rounds it all off with a tangy note and a lightly floral taste. This hot sauce is like a fine red wine and that’s exactly how you can best pair it.
