Eaten Alive Fermented Hot Sauce – Chipotle
Now this is a bottle with somewhere to go. There’s smoke, obviously, but underneath it sits a surprisingly dark combination of muscovado sugar, bitter orange, cumin, allspice and a little cacao. Add garlic, oregano and fermented chilli to the affair and you’ve got something with considerably more personality than your average smoky sauce. The chipotle gives it that familiar roasted chilli character, while the habanero adds enough bite to stop all that richness becoming too comfortable. This is particularly good with food that can take a bit of weight behind it. Tacos, pulled pork, chilli, beans and BBQ all make excellent candidates. Stir some through a slow-cooked dish, use it as a dip, or put it on the table and let everyone make their own decisions.
