Balefire’s Arcana – Thai Hot Sauce

Now this is an interesting one. Arcana takes Thai-inspired flavours and throws ginger beer into the experiment, with rather pleasing results. Fermented chilli brings the heat, but ginger, lemongrass and kaffir lime leaf quickly join the party. The ginger beer adds a fragrant sweetness and a distinctive finish that makes this considerably more interesting than your average chilli sauce. I’d reach for this with Thai dishes, noodles, stir-fries or grilled chicken. It could also work beautifully with prawns and other seafood, where the citrus and ginger can really shine. A clever combination of heat, fresh aromatics and ginger spice. Sometimes the mad experiments work.
