Ghost Pepper and Carolina Reaper are not generally known for their subtle social skills. Fortunately, there’s miso involved. Aka Miso Ghost – Reaper combines serious chilli heat with a deep, savoury umami character. The miso gives the sauce plenty of body, while tamari, sesame and Japanese seven spice bring salty, nutty and aromatic notes that keep the chillies from simply bulldozing everything in their path. This is very much an addition for food rather than a novelty bottle. I particularly like the idea of it with ramen, noodles, rice dishes, grilled meat or anything involving mushrooms. A little stirred through a broth or marinade could also produce rather interesting results. The Ghost and Reaper combination means you should treat the bottle with some respect. But underneath all that heat is a genuinely savoury sauce with enough going on to reward anyone willing to get past the chilli. Featured on Hot Ones Season 10. Clearly, somebody else has already made some questionable decisions.
