If you like smoky flavours with your food, Melinda’s Chipotle Hot Sauce is a very good choice. As usual with Melinda’s, the base is formed by Habanero’s and carrot, but large amounts of Chipotle have been added for an extra smoky flavour. Pizza Hot Sauce Ranch

Someone has finally put hot sauce and ranch in the same bottle. I have some questions. Mostly about why nobody did it sooner. The cayenne brings the chilli, while the creamy ranch-style base takes the sharp edges off. Garlic, onion and black pepper give it plenty of savoury character, so it doesn’t disappear beneath a mountain of cheese. Pizza is the obvious target. Pepperoni, chicken, veggie, four cheese — I’m not here to police your toppings. But don’t stop there. Wings, sandwiches, salads, fries and anything that could benefit from a creamy chilli dressing are all fair game. It’s hot sauce with a second personality. Rather good, actually.

This is Melinda’s Green Sauce, with green tomatoes, jalapeños, spinach, cilantro and garlic. The brand itself describes the sauce perfectly: “it is a social sauce – gets along well with any kitchen and should be invited to every meal.” Due to its tart and savoury character, this hot sauce is super versatile and because it is quite mild, everyone can handle it. By the way, this is the first hot sauce in our assortment with spinach! And it comes in a handy & large squeeze bottle. Ideal! This Melinda’s Habanero Wing Sauce has a nice creamy structure (which is great for dipping) and is perfect in combination with your favorite pieces of chicken! A mix of Cayenne & Habanero peppers provides a medium kick and onions, garlic and carrots provide a good ‘Buffalo style’ hot wing flavour. Some hot sauces are complicated. This one has other priorities. Melinda’s XXXXtra Reserve puts the habanero firmly in charge, with a short ingredient list that leaves very little for the chilli to hide behind. Carrot and onion add a little body, while lime and vinegar bring the sharpness needed to keep all that pepper from becoming too heavy. And yes, it is properly hot. The aged habaneros bring more than just heat, though. There’s a fruity, almost citrusy character underneath the fire, which makes this surprisingly useful when you want to add serious chilli without changing the entire dish. Eggs. Pizza. Burgers. Tacos. Soup. Whatever is on the plate, really. Just remember: “everyday hot sauce” does not necessarily mean “use everyday quantities”.

I have discovered a dangerous combination: a sauce that makes you want to dip absolutely everything into it. Melinda’s Sriracha Ranch has the creamy, cooling side of ranch, but there’s enough garlic and chilli lurking underneath to stop it becoming too polite. The sweetness takes the edge off, while a little black pepper keeps things savoury. I particularly like it with food that has a bit of char on it. Grilled chicken, burgers, fries and wraps all make excellent victims. It also has a rather unfortunate talent for making vegetables disappear, which I consider suspicious but useful. Keep it in the fridge. Keep it near the dinner table. And perhaps don’t hand the bottle to someone you were hoping would leave some for you.

Mustard is generally a fairly sensible condiment. Habanero has never shown much interest in being sensible. Melinda’s Amarillo brings the two together rather effectively. You get the sharp bite you’d expect from mustard, followed by a fruity habanero kick that hangs around just long enough to make its point. Onion and vinegar keep everything bright, while turmeric gives the sauce its striking yellow appearance. I particularly like this with sausages and burgers, where the mustard side makes perfect sense. It also has considerable potential in sandwiches, soup and even on cheese on toast.

This is the sort of sauce that makes me want to put a plate of something messy in front of myself and forget about cutlery. The roasted peppers give it a darker edge, while lime cuts through with enough sharpness to keep things lively. Garlic, cumin and paprika add the savoury warmth, and the habanero makes sure there’s still a little mischief in the bottle. Tacos and burritos are obvious. Eggs are an excellent idea. Pour it over nachos, grilled meat or a bowl of rice and beans when dinner needs some persuasion. The heat is perfectly manageable, too. You get enough chilli to notice it without having to sign a liability waiver before breakfast.
